Peanut butter balls aka Buckeye Balls

Ingredients 16 oz. peanut butter 1 pound confectioners sugar 1.5 sticks (3/4 cup) butter Directions melted chocolate bark for dipping Mix together the peanut butter, sugar and butter. Roll into balls, insert tooth pick (to dip easier) and chill in freezer about 30 mins. Dip into melted chocolate, place onto cookie sheet lines in wax paper best stored in the fridge. coconut pecan cake icing and coconut flakes can be added to the mixture for new taste!

CROCKPOT GUMBO

Ingredients 3 tablespoons flour 3 tablespoons oil 1/2 pound smoked sausage, cut into 1/2 inch slices 2 cups frozen cut okra 1 large onion, chopped 1 large green bell pepper, chopped 3 cloves garlic, minced 1/4 teaspoon ground red cayenne pepper 1/4 teaspoon pepper 1 can (14.5 ounce size) diced tomatoes, undrained 1 package (12 ounce size) frozen shelled deveined cooked medium shrimp, rinsed 1 1/2 cup uncooked regular long-grain white rice 3 cups water Directions In small saucepan, combine flour and oil; mix well. Cook, stirring constantly, over medium-high heat for 5 minutes. This is your Roux. Reduce heat to medium; cook, stirring constantly, about 10 minutes or until mixture turns reddish brown. Place flour-oil mixture in 3 1/2 to 4 quart Crockpot. Stir in all remaining ingredients except shrimp, rice and water. Cover; cook on low setting for 7-9 hours. Big Apple Fritters

3 cups all-purpose flour 1½ cups sugar 3 teaspoons baking powder ½ teaspoon salt Directions Pour oil into a deep skillet or Dutch oven to a depth of about 3 inches.  Heat to 375 degrees.  Sift flour, sugar, salt, and Apple Pie Spice into a large mixing bowl.  Place eggs in a separate bowl and beat them lightly.  Stir in milk and vanilla.  Make a well in the center of the dry ingredients and pour in the milk mixture. Add butter and beat with a mixer on low speed to moisten, about 1/2 minute. Scrape down sides of bowl and increase speed to medium for 2 minutes longer. Fold in apples. Using a 1/4 cup size measuring cup, drop into hot oil. Be careful not to splash the oil on yourself. ZUCCHINI PIZZA CASSEROLE (from Chef Ron Lock)

Ingredients: 4 cups shredded zucchini (about 5 small zucchini's) 1/2 tsp. salt 2 eggs 2 tbsp. parmesan cheese 2 oz. cheese (I used mozzarella and cheddar) 1 tsp. italian seasoning 1 lb. ground beef 2 oz. pepperoni, chopped 1 medium onion, chopped 2 cups spaghetti sauce 1 medium bell pepper, chopped 4 oz. cheddar or mozzarella cheese (or a mix of both) Directions: Shred zucchini. Mix the zucchini with 2 eggs, parmesan cheese, 2 oz. of cheese and italian seasoning. Press the zucchini mixture into the bottom of a lightly greased 9 x 13 in. glass baking dish. Bake the crust uncovered for 20 minutes at 400 degrees. While the crust bakes, brown the ground beef in a large pan. Add in the onion, pepperoni and spaghetti sauce and cook until onion is soft, about 5 - 7 minutes. Remove the crust from the oven. Pour the meat and sauce over the crust. SHRIMP and CRABMEAT ETOUFFEE

You’ll Need: 2 onions, chopped 2 stalks celery, chopped 1 teaspoon olive oil 1/4 teaspoon Granulated Garlic 2 1/2 cup chicken broth 1/4 cup flour 3 tablespoons lemon juice 1/8 teaspoon Cayenne Pepper, or to taste 2 teaspoons Tabasco sauce 1 1/2 lb shrimp, peeled and deveined 1 1/2 lb lump crabmeat 1/4 cup green onions, chopped 1/4 cup fresh parsley or 1 1/2 tablespoon Dried Parsley 3 cups cooked Basmati or brown rice How to: In a large stockpot, sauté onions and celery in olive oil until softened, about 10 minutes, stir in garlic granules. Combine chicken broth and flour and stir until smooth. Add to celery mixture and bring to a boil. Reduce heat and simmer until thickened, about 30 minutes. Add lemon juice, cayenne and Tabasco sauce. Add shrimp and cook about 5 minutes. Add crabmeat, green onions and parsley and cook for an additional 5 minutes. Serve over rice. Ecstasy Cake

If you are looking for a better than sex cake, you just found it! This cake is so delicious it will take you to another world! Check out how it’s made. You’ll Need: 1 box of chocolate cake mix. 12.25 oz jar of caramel. 8 oz tub of cool-whip or whipped topping. 1 (8 oz) package of heath baking topping. 14 oz can of sweetened condensed milk. How to: First, bake the cake as directed in the package instructions in a 9×13 baking pan, poke holes in the cake and let it cool. In a bowl, mix together the sweetened condensed milk and caramel then pour the mixture over the cooled cake. Let the cake set for 15 minutes then frost with the tub of cool whip. Pour half of the bag of heath bits over the top and enjoy! Easy, peasy and yummy! At least once a week, I make an amazing cake such as this one. Give it a try, it’s totally worth it!

Taco Cornbread Casserole

My husband loves taco meat. I have about 5 to 6 recipes with taco meat and this is the best! CHeck out my taco cornbread casserole, and let me know what you think. You’ll Need: 1 package of cornbread/muffin mix. 3 cups of cooked taco seasoned meat. 1 (8 oz) cup of light sour cream. 1 cup of colby jack, cheddar or mexican cheese, shredded and divided. ½ cup of chopped onion. 1 medium chopped tomato. 1 cup of shredded lettuce. How to: Prepare the cornbread in a large bowl according to the package instructions then spread it in an 8×8 sprayed pan. In a preheated oven to 350°, bake the cornbread for 20 minutes. In a bowl, mix together the sour cream, ¾ cup of cheese and onion. Spread the meat over the cornbread then top with the creamy mixture. Bake for 15 more minutes then sprinkle with tomato, lettuce and ¼ cup of cheese. Voila! Simple, easy and cheesy! This is a whole meal! You don’t need any side dishes or salads. This will do. Give it a shot, it’s worth it.
